Mistura Culinary Festival–Taste the Peru’s authentic cuisine in one place, immersing deeper into the wide variety of Peruvian flavor, led by our local foodie Leader. Peru is mostly famous for Machu Picchu but slowly the pride of all Peruvians is being recognized — “their food”. Recently its coastal city, Lima, has been riding a wave of growing fame for its gustatory pleasures. And it’s now drawing a new flock of visitors who travel all the way to Peru just to eat. Celebrity chefs, a mega- farmer’s market, and a “Hall of Pisco”—these are the hallmarks for Mistura, Latin America’s biggest annual food festival. All serious food-lovers know that Peru is creating some of the world’s most innovative, exciting cuisine at the moment, and Mistura, which takes place in Costa Verde beach in Lima’s Magdalena del Mar district, it’s a showcase for specialties from all regions of the country. El Gran Mercado is an annual festival highlight. The sprawling farmer’s market will feature with over 300 farmers from around Peru, each showcasing products from his or her region. Visitors can try some of the thousands of varieties of potatoes grown in Peru, along with colorful types of quinoa, coffee, and spices.

The food trucks that assemble for Mistura demonstrate the sheer variety of street food available nearby. Enjoy Peru’s signature dish, ceviche is a tangy plate of raw fish and shellfish marinated in lime juice and ajíes, or hot chile peppers. Sweet and savory tamales from Cusco’s Tamales Josefina, Picarones (Peruvian donuts) made from quinoa and drizzled with Maracuya sauce from La Picarona del Perú, and potatoes stuffed with spicy sausage and chili chicken from Señor Papa. Try Pisco, the indigenous white grape brandy that’s the main ingredient in the pisco sour — Peru’s national cocktail. The frothy concoction, made with egg whites, is delightful, though the trend is toward mixologists pouring newfangled variations on the classic cocktail, such as a Coca, Maracuyá or Lúcuma Sour, and rosters of artisanal piscos for connoisseurs. This year’s theme is “the different regional cuisines of Peru”–Mistura Culinary Festival.

Date: This cuisine event is only once a year. This year, the festival will run from the last week of  August and the first week of September and will be held in Lima’s Costa Verde, Magdalena del Mar. However, the place of the event is not sure yet, according to the president of APEGA, Bernardo Roca Rey, the event could take place at their own base, which is still unknown. Day 01. Visit to local market, Catacombs of San Fransisco church, and Larco Museum.

Today’s tour teaches us with a great introduction to Peruvian ingredients in a special local market, then to use the same ingredients during the private cooking lesson, and the tour also takes us to explore special museums, places that hold pre-Incan and colonial artifacts, led by our Leader.

In the morning, we have a tour to Magdalena local market. This is a great place for an introduction to the great diversity of foods in Peru. The local market contains a wide variety of well-stocked bread, fruits, cheeses, fish, meats, potatoes, dried beans, nuts, seeds, herbs, flowers and many of the natural products from all over the country of Peru, including many of the pre-Columbian food items of Peru. Our foodie Leader will explain the unknowns – how they taste and are prepared. Of course, you may want to sample for yourself. It is normal to see women from the countryside wearing the colorful dress of their regions selling local products. The market includes an incredible range of produce, meats, fish, and seafood. As well as small restaurant stalls are a great place to view some of the many types of common dishes including many types of Causa and fresh Ceviche. This combination of marinated fresh seafood is one of Peru’s most famous dishes. After the market tour, for lunch, we have a special private cooking class at a restaurant.

In the afternoon, our tour continues to the church and convent of San Fransisco. Many crypts of San Francisco has become famous with the name of catacombs similarity with Roman, these are series of underground vaults (under the chapels of the church), they were used until the early nineteenth century, and served as a burial for members of fraternities and sororities. We’ll explore through vaulted ceilings or flat linked by passages and arches, built in brick and masonry, on the floor in rectangular tombs the coffins were placed, separated by layers of lime which are still seen, to accelerate the body decomposition process, in order to prevent epidemics and odors. This convent also offers a great collection of colonial art, in canvases, sculptures, silverwork, etc.

We then visit one of Lima’s outstanding museums, the Larco Herrera Archeological Museum to learn about the ancient cultures of Peru. The museum is housed in the 18th-century vice-royal mansion built over a 7th-century pre-Colombian pyramid. Its galleries provide a thorough overview of 4,000 years of Peruvian pre-Incan history. The museum has the world’s largest private collection of pre-Incan art, including Moche, Nazca, Chimú, Inca artifacts, the finest gold and silver collection from Ancient Peru, and its famous erotic art ceramics. After finishing our tour, you’ll be transferred back to your hotel. Meals not included.

Day 02. Visit to Mistura, a complete food exploration!

Bon Appetit! Today makes us ready for the world’s biggest gastronomical events and the largest food fair in the world – Mistura!. We have a full day exploration at the festival. To avoid the large crowds, we’ll arrive in the morning when the gates open and before the lines start at the popular booths.

We’ll witness and enjoy a rich feast along with its history, food has long been associated with Fiesta. The Mistura food fair brings together the various actors in the chain cuisine of Peru: farmers, producers of pisco, cooks, bakers, food sellers, confectionery, huariques, restaurants, cooking schools, and commercial companies. In Mistura, a special tribute is paid to Pachacama (Pachamama). The richness of Peruvian cuisine is based on history and at the confluence of particular styles culinary and inputs from different regions of Peru – hence the name Mistura, which means mixture. To this regional diversity is added 5 centuries of contributions of European tastes, Arabs, Africans, Chinese, and Japanese.

While exploring in the Great Market area, about 300 suppliers will be present from such areas as Cusco, Puno, Ayacucho, Huancavelica, Apurimac, Huancayo, Oxapampa, Iquitos, Pucallpa, Piura, La Libertad, Lambayeque, Cajamarca, Ancash, Moquegua, Arequipa, and Tacna. Many sell their entire production in the early days. Tarwi, cañihua, quinoa, salt maras, custard, coffee, hot chili, soft leaf stalk, cocona jams, native potatoes, etc., are just some of the products for sample and sell. The $5 million event will feature the Great Market which invites 300 farmers from across Peru to sell produce and processed foods to go. Some will be competing for the Golden Rocoto Prize which is awarded to the youngest and most outstanding food producers.

Still, a lot of restaurants to visit and explore, about over 200 restaurants will be grouped into zones including barbecue, sandwiches, rustic country foods, local secrets, seafood, sweets, food trucks and more. The fair will feature artisan brewers and distillers of pisco and wine, as well as the opportunity to shop for crafts. Throughout the week attendees will enjoy traditional music such as cumbia and salsa. There is also a marketplace with specialty products, demonstration and lecture stages, live entertainment and parades. It’s like a Peruvian food Disney World! While there are plenty of free samples, food and drinks from the stands is bought with tickets, which can be purchased in separate stands throughout the park.

The Mistura is a great place to taste international renowned food, as this festival attracts internationally acclaimed chefs such as Ferran Adria of El Bulli, Alex Atala of D.O.M. in Sao Paulo, Dan Barber of Blue Hill in New York, Massimo Bottura of Italy’s La Osteria Francescana, Rene Redezipi of Copenhagen’s Noma, Quique Dacosta of Spain’s Quique Dacosta Restaurant. Many famous Peruvian chefs will be there, such as Gaston Acurio, Rafael Piqueras, Rafael Osterling, Virgilio Martinez, Javier Wong, Giacomo Bocchio, Mitsuharu Tsumura, Ferran Adrià, René Redzepi, Alex Atala, Massimo Bottura, Victor Gutierrez, Luis Arevalo, Astrid Gutsche, Jaime Pesaque, Toshiro Konishi, Cyrus Watanabe, and Pedro Miguel Schiaffino (many will have food booths for a taste of their internationally renowned creations). After having a great day at the food festival, we’ll drive back to our hotel. All meals included.
